Job Summary

Houston Skilled Consultancy is seeking an experienced and passionate Multi-Cuisine Chef to join the culinary brigade of a prestigious international cruise line. This is a unique opportunity for a skilled chef to showcase Indian and Continental culinary expertise in a high-energy, multicultural environment at sea. You will be responsible for preparing, presenting, and maintaining the highest standards of food quality, safety, and presentation while serving a global clientele aboard a luxury cruise ship.

Key Responsibilities

  • Plan, prepare, and execute diverse menus with a focus on both Indian and Continental cuisines.

  • Ensure consistency in taste, portioning, presentation, and food quality across all dishes served.

  • Supervise kitchen staff and coordinate food preparation activities across various galley stations.

  • Maintain hygienic food handling practices in line with cruise ship and international health and safety regulations.

  • Monitor inventory levels, manage food supplies, and reduce waste through effective kitchen management.

  • Cater to special dietary requirements and food allergies with sensitivity and professionalism.

  • Collaborate with the Food & Beverage Manager and Hotel Director to design themed menus and culinary events.

  • Participate in onboard culinary shows or live cooking events for guest engagement.

Required Skills and Qualifications

  • Culinary Degree/Diploma from a recognized institute (Hotel Management or Culinary Arts).

  • Proven knowledge and hands-on experience with Indian (North & South) and Continental dishes.

  • Excellent understanding of food safety, HACCP standards, and maritime hygiene protocols.

  • Strong communication and leadership skills to manage multicultural kitchen teams.

  • Ability to work in a high-pressure, fast-paced kitchen environment with a positive attitude.

Experience

  • Minimum 3-5 years of professional kitchen experience, preferably in 4-5 star hotels, fine dining restaurants, or cruise ships.

  • Prior cruise ship galley experience or international hospitality exposure is highly preferred.

  • Experience in buffet service and a la carte plating is essential.

Working Hours

  • 9 to 10 hours per day, rotational shifts including weekends and public holidays.

  • 6-day work week with onboard accommodations and meals provided.

  • Contract duration typically ranges from 6 to 9 months, with options for renewal.

Knowledge, Skills, and Abilities

  • In-depth knowledge of global cooking techniques, regional ingredients, and food presentation.

  • Multitasking, time management, and organizational skills.

  • Cultural sensitivity and adaptability in a diverse crew and guest environment.
